Zippy, can you get whole wheat pitas around there? I make these things every time I serve chili... Take pitas and split them into two layers (leave them round) then spread them with (whatever you like) butter, or margarine, or EVOO, or some sort of oil/butter thing. Then add whatever spices... I use fresh garlic, and add a bit of parsly or Garlic Plus (a dried mixture). Then, I lay the two sides back together and cut them into wedges with scissors. Then split them back apart, spread on a baking sheet until they are browned and crispy. (about 5 minutes) We love them with our chili. They are also good with any kind of dip. I've done the same thing with whole wheat tortillas, but they are a different texture. When I was a kid, I didn't like the beans in chili. But, if my parents took me out somewhere and they were serving chili, I would have eaten it. (isn't that what you're supposed to do when you're a guest and someone else is serving food? ). Man, I'm so pumped tonight, we are doing so well with our C25K program. We ran a full 20 minutes tonight! whoo hoo! Had dr's appointment today, it wasn't too bad... Basically my triglycerides are a tiny bit high (so exercise and eat smart, which I'm already trying to do) and like I suspected, he diagnosed me with hypothyroidism today. He said he will not treat it at this point, but he will monitor my thyroid levels every 6 months for now. Hubby asked him about his knee and he's sending him for an MRI right away, so that's great too. We like our new family doctor, even though it's an hour and a half drive. Chase is a "healthy baby boy"! He weighs 24 pounds and is about 30 inches long. The doctor says he has big feet (which we already knew...that kid is like bigfoot!) Crystal, still thinking about you guys and praying. Nicole, is it the griefshare course?

Yolanda, I'm glad you have some answers at least about your health. A little while ago I was having a good bit of anxiety, not about the baby, something else completely beyond my current control, but I did pray about it, and I feel the anxiety leaving me. We all have buttons, don't we? Little things that make us want to cringe in a corner, even though it seems silly to a 3rd party.

Yolanda, What were your exact results? And why is he going to wait so long before starting any treatment? (6 months is a long time in thyroid terms) What symptoms do you have? (Forgive all my questions, I'm just a bit passionate about this - let's just say medical care often isn't all it should be with regards to thyroid problems)

I don't have any symptoms. He didn't really get into details. I've had extensive tests on my thyroid in previous years. I have multiple nodules, of which they are not concerned. I was seeing an Endocrinologist for a while, but he couldn't speak english so I quit going. He said something about levels being at 10 before treating. I'm around 5. He said he might start medication around 7or 8. But that makes no sense if it's underactive. Oh, never mind I found this quote:
Thyroid Stimulating Hormone (TSH) : This protein hormone is secreted by the pituitary gland and regulates the thyroid gland. A high level suggests your thyroid is underactive, and a low level suggests your thyroid is overactive. from here He's pulling the results from the radioactive scan that I had done a couple of years ago and calling me about it this week. I'm really not worried about it. This is totally expected as my Nana, my mom, every one of my aunts and uncles, and some of my cousins all have hypothyroidism. I knew it was coming, and know that it can be treated. Our basement walls are finished! I can't believe how fast this all happened! We are leaving to go camping tomorrow and having Chase's birthday party at the park where we are camping. It looks like rain, but I'm not really worried, we can go to a kitchen shelter or use our awning on the trailer and tarp the rest of the site. Should be a good party!

I knew it was coming, and know that it can be treated. Yolanda If your TSH is at 5, you should be being treated now. There are two "normal" ranges used by doctors - one is 0.3-3.0 and the other is 0.5-5.0. Most leading thyroid doctors use the first one - ie anything over 3 and you're hypothyroid. At 5 you are definitely hypothyroid, and to wait till it's up to 7, 8 or even 10 is IMO crazy. That number indicates the amount of effort your system is having to put in to making your thyroid work - and the more effort it has to put in, the more stressed your system is. Did he test your T4? or test for thyroid antibodies? (to see if it's an auto-immune disorder) I would personally recommend that you get a second opinion. You've mentioned depression before - are you aware that's a symptom of hypothyroidism? I appreciate that not all depression is thyroid-related, but unless you're aware of another reason, yours could be. Also, are you carrying any extra weight at all?

My son really likes chili, but not every child does. I think it was Manda who suggested to ask the parents... Someone else mentioned cooking hot dogs as well. They'd go with the chili....even though they're not necessarily that healthy.

I've bought some semi-healthy hot dogs before. All beef, no preservatives (other than salt - no nitrates or nitrites or any of that). They were expensive, and I don't remember the brand name. My husband enjoyed them though, esp since I rarely buy stuff like that. If they weren't so expensive, I'd get them more because there really wasn't anything in them that stood out to me as being bad other than they weren't like cooking from scratch. Depending on your budget, maybe you could find something like that. As for a side for the adults, I'd make guacamole with whole grain baked chips. Not low cal, but not unhealthy and tastes really good.

And yummm on the hummus. I should make some of that. But I used our last chickpeas for "mock tuna salad" the other day.
