ive seen zucchini used in brownies before, and they were delicious. ive also had zucchini bread and the other day i had zucchini in lasagne the other night, that was good too.

I usually just steam or stuff em.

I didn't know about this thread, but today I saw a recipe for zucchini, so I'll share.

STUFFED WHITE ZUCCHINI


Serves 8

8 white zucchini
1 tablespoons olive oil
1 brown onion, chopped
2 garlic cloves, chopped
300g (10.5oz) lamb mince/ground lamb
400g (14.1oz) can chopped tomatoes
1 tablespoon tomato paste
1 teaspoon ground cumin
3 bay leaves
1 cup short grain rice
1/4 cup chopped continental parsley
1/4 cup natural yoghurt
2 tablespoons chopped mint
mint sprigs, to garnish

Halve zucchini lengthways. Carefully scoop out the centres using a teaspoon.

Heat 1 tablespoon olive oil in a saucepan over medium heat. Add onion and garlic and saute for about 5 minutes until softened. Transfer to a bowl.

In the same pan, heat remaining oil and cook mince, stirring occasionally for 10 minutes or until well browned. Stir in tomatoes, tomato paste and cumin. Add bay leaves and cook for 5 minutes.

Return onion mixture to the pain with rice. Season with salt and ground black pepper. Simmer for 15 minutes. Remove and discard bay leaves. Preheat oven to 200C (392F).

Fill each zucchini with meat sauce and place into a shallow baking dish in a single layer. Pour in water to 1cm (1/3 inch) deep, cover with foil and bake for 30 minutes until zucchini is tender. Remove foil and bake for 10 minutes more until golden. Combine yoghurt and mint and dollop a little onto each zucchini to serve. Garnish with mint sprig to serve.

Trish; that recipe sounds yummy!

I would adapt it by leaving out the tomato paste and the yogurt, but I think I might try that recipe one day.

Want some more ideas?

Steam zucchini until just tender. Halve lengthways and sprinkle with grated cheese and paprika. Grill until golden.

Saute grated zucchini and add to a frittata or omelette.

CHARGRILLED ZUCCHINI

Serves 4

2 tablespoons extra virgin olive oil
1 garlic clove, crushed
6 medium zucchini, sliced lengthways
salt and freshly ground black pepper
250g (0.5lb) cherry tomatoes, halved
50g (1.7oz) snow pea sprouts, trimmed

Combine oil and garlic in a small bowl. Brush both sides of zucchini slices with the garlic oil and season with salt and pepper.
Cook the zucchini on a hot barbecue plate or chargrill for 2-3 minutes on each side or until golden and tender.
Place into a bowl with cherry tomatoes and sprouts and toss gently.


POTATO AND ZUCCHINI PIZZA


Serves 4

1 teaspoon dried yeast
1 teaspoon sugar
1.5 cups plain/all purpose flour
0.5 cup warm water
1 tablespoon olive oil
2 potatoes, thinly sliced
1 zucchini, thinly sliced
100g (3.5oz) baby bocconcini, sliced
oregano leaves
chopped fresh chilli

Combine yeast, sugar, 2 tablespoons flour and water in a small mixing bowl. Blend until smooth. Cover with plastic wrap. Allow to stand for 10 minutes or until foamy.
Sift remaining flour into a large mixing bowl. Make a well in the centre of the flour. Add yeast mixture. Mix to a firm dough.
Turn dough out onto a light floured surface and knead until smooth. Cover dough with a tea towel and set aside in a warm place. Leave for 30 minutes or until risen.
Punch dough down and work it (with your hands or a rolling pin) into a round to cover a pizza tray. Press out, tidying the edges.
Spread dough with oil. Top with a layer of potato, zucchini, bocconcini, oregano and some chilli.
Bake in a very hot oven (220C or 430F) for 15-20 minutes or until base is crisp and topping is tender. Serve with salad.

I am so glad that this thread was here. I was recently gifted with a zuccini the size of my arm, and had no idea what to do with it. Wow, I have lots of ideas now...WOO HOO, you guys rock.

I like to fry mine. I cut it up into slices. I dip it in egg and bread it in whole wheat flour. Then I fry it in olive oil.

Chop into bite sized pieces........

Place on a baking sheet with onions, bell peppers and crushed garlic cloves.........

Sprinkle with olive oil, salt and pepper, italian seasoning

And roast until tender with toasty edges!

Heaven!

For an entree: Pile the roasted veggies on top of really ripe sliced steak tomatoes, top with mozzarrella cheese and parmesan cheese. Place under broiler to melt cheese.

I promise you won't miss meat!

Yummy!

ZUCCHINI SOUP


500g (1lb) zucchini
2 1/2 cups milk
1 teaspoon butter
salt and pepper

Cook zucchini in boiling water until tender. Drain and put through sieve or puree in blender. Combine with milk, butter, salt and pepper. Reheat slowly before serving.

ZUCCHINI PICKLE


1kg (2lbs) zucchini, thinly sliced
2 small onions, thinly sliced
1/4 cup salt
2 cups white wine vinegar
1 teaspoon caraway seed
1 teaspoon turmeric or cummin
2 teaspoons mustard seed

Place slice zucchini and onion in a bowl, add salt and cover with water. Stand for 2 hours. Drain well. Bring all the other ingredients to boil. Pour over zucchini and stand further 2 hours. Replace on stove and bring all to boil, simmer for 15 minutes. Bottle and seal.

SPAGHETTI WITH ZUCCHINI, TOMATO AND RICOTTA


Serves 4

500g (1lb) spaghetti
1/4 cup (60ml or 2fl oz) olive oil
4 medium zucchini (480g or 1lb), cut into 5cm (2") lengths
3 cloves of garlic, thinly sliced
500g (1lb) cherry tomatoes
100g (3 1/2oz) baby rocket leaves
1 1/4 cups (250g or 1/2lb) ricotta cheese

Cook pasta in large saucepan of boiling water until just tender; drain.
Meanwhile, heat oil in large frying pan, add zucchini; cook, stirring, until zucchini is just tender. Add garlic and tomatoes; cook, stirring occasionally, until tomatoes split and soften.
Combine hot pasta, tomato mixture and rocket in large bowl.
Serve spaghetti mixture topped with crumbled ricotta.
