shepards pie
I recently picked up a recipe magazine that had mini shepards pies- refrigerator biscuts pressed into the bottom of muffin pans, the filling, home made or boxed mashed potatoes on top, bake and freeze any leftovers. Cooking for one, that made me smile because making a whole shepards pie just doesn't work for me, so maybe these will!

Ground beef stroganoff. I'll probably have a salad on the side.

spaghetti with ground beef and pasta sauce.

We make it the same each time: saute garlic in a little oil and margarine, add ground beef and brown (shake in SeasonAll, onion power, and italian seasoning) Drain fat. Add a can of diced tomatoes with basic, garlic, oregano. Add a jar of Prego sauce.
When serving, I like to add a pat of butter to the pasta before I top it with the sauce. We keep parmesan on hand.

leftover barley I might eat as a side dish if I can figure out how to dress it up.

There is always the dependable trio celery , onions and peppers. Also carrots, garlic, greens...etc
Going into Autumn I start thinking about soup, so I'm glad you put barley up on the board for consideration. I'll have to buy some.

Sloppy joes. I'm putting mine over quinoa instead of on a bun; hubby will get a bun.

beef roast, mashed fresh dug potato, and a concoction of zucchini, onion, garlic, green pepper and a touch of fresh basil. (I felt creative.)

Leftover beef stew (Sunday dinner was at my house yesterday and I made two kettles full)--has potatoes, carrots, celery, green beans, baby corn, onion...I think that's it for veggies.

Good for you!

I'm going to try and make Chicken Capri. I got the recipe idea from christsstar over in the women losing weight thread.
