It also has eggs and then is topped with parmesan cheese. It turned out quite scrumptious. We've been out of town for a while so it is nice to get back into the food groove.

That sounds intriguing, LL! Today is our wedding anniversary. Since we don't care to go out on weeknights (hubby gets home late, so we like to eat right away when he gets home), I'm making one of his favorite meals that I can't stand - a tomato, beef, egg noodle, and green olive concoction. I'll eat some hamburger stew I made on Saturday. And I'm planning on making a couple mini chocolate pies (mini because with just the two of us, we have to diligently and voraciously eat a whole pie before the crust gets too soggy, and with my current eating plan, that's just not possible. I will eat some, definitely, but not half a pie over the next 2-4 days!) We found some aluminum "pot pie pans" which look like they'll work well for this purpose.

And now HAPPY ANNIVERSARY, Tricia! I don't have a clue about our dinner this evening. Wednesday's are always a bit crazy. We host a Bible study in our home every Wed night so I'm always scrambling to get dinner over with and the kitchen cleaned up before people begin arriving. My husband and I are basically late eaters---like dining about 8pm so eating at 5:30 or 6 is a real stretch. But we do it. Tonight I will either make stuffed acorn squash which is an easy meal and yummy or I will make Tuscany soup (which has potato & kale). Any votes? Edited to add: Oops! It looks like I fibbed when I said I didn't have a clue about dinner. Or did the Spirit just quickly lead me to some choices? (Don't vote on that one.)

Tonight I'm doing boneless rib steaks on the grill. Side dishes will be potato and onion slices stacked with some butter, salt, and pepper, then wrapped in foil and tossed on the grill, (drooool) and the asparagus I've been putting off for a week.

I have to say, sounds like people eat too much carbs and not enough protein and fresh foods. Also too much meat and I bet most eat processed foods as well. I am having a banana for b'fast with some yoghurt and also some semolina & milk. Also a grapefruit.

Anyhoo...I will never say anything derogatory about anything anyone eats again...I'll just say when it sounds delicious! Tonight we are having Turkey Scallopini (we've had that a lot lately because we love it!) with wild rice, baked squash and asparagus.

Again this is my own creation but we think they're yummy. I start by browning a pound of Jimmy Dean italian sausage. I use half of it for the two of us and save the other half for another meal. While that's browning, I bake the squash cut side down for 30 minutes at 350. I mix 1/2lb browned italian sausage with grated carrots, onion, sometimes zucchini or summer squash, sour cream, salsa or picante sauce, garlic, and last night I had some cooked rice and threw that in. Mix that together. Then when the squash has cooked 30 minutes, I take them from the oven, fill them with my sausage/veg mixture and bake them for another 20 minutes, then top with parmesan cheese and bake another five minutes. Really you can improvise and use 'whatever' and they always turn out good. But we love 'em because it's a self-contained meal and when you're done, we just put the rind down the disposal and voila! we've cleaned up! Anyway, if I left anything out or you have questions, just ask. LL

Transfer to a platter and keep warm, covered. -Add more oil to skillet and cook garlic over moderate heat, stirring, until fragrant, about 30 seconds. Add broth and deglaze over moderately high heat, scraping up brown bits. Boil until broth is reduced to about a cup. -Stir in lemon juice, parsley, capers and salt and pepper, to taste and swirl with a whisk until a smooth sauce is formed. -Return turkey to skillet with any juices on platter and simmer until heated through, about 1 minute. -Serve This is great with rice or pasta and fresh veggies.
