What's the best way to roast potatoes? I've read different recipes that tell you to boil them first, or to just cut and throw in the oven. I'm not sure what is the tastiest way to go about it. I'm using regular baking potatoes, and keep most spices and ingredients on hand. Any suggestions would be helpful!

The "Besy" way would be to not do them with roast beef.[:D]

I just peel them and rub them with olive oil, salt and pepper (and rosemary if you like) and put in the oven @350 until fork tnder.

Do you always peel them? I know that with red potatoes you can leave the skins on, so I figured I would do the same for the baking potatoes. At 350, would you say about 45 min to an hour sounds about right? I'm looking at about an hour and 15 min until dinnertime

I usually peel them, but you can leave the skins on if you like. Yes, I do the same for baked and about 1 hour if they are large....less if they are small.

Here's the recipe I use as a basis.

I use different types of potatoes and different types of onions. I've also used it without onions. I never peel the potatoes, whatever variety I use. The key with the onions is to have them the same size as the potatoes, whether you chop a large onion or use cippolini onions, as suggested. I like my potatoes with a crust, so sometimes I amend the recipe by starting with a 500 degree oven and then reduce the temp when I put the potatoes in or extend the cooking time for about 15 minutes.

I guess you are probably eating now, though. [;)]

I quarter mine (peeling on), drizzle with olive oil, salt, pepper, garlic, parsley. Roast at 400 for 30-ish minutes (until tender). Yum!

If I don't want to heat the house up in the summer I toss them in the crock pot for the afternoon and forget them. Same recipe as above.

I am SOOO making those for dinner tonight! I don't care if I don't get home until 8:30 (and usually go to bed at 9:30!)... I will stay up late for those!

I've done those potatoes before, but with butter and garlic and herbs (rosemary & thyme). Another way to keep from heating up the kitchen is to put them in foil on the back of the grill.

Wow, the crock pot idea is great! I rarely use mine, but found a wonderful recipe for lasagna using it. It came out amazing, hubby was quite impressed!

I make foil packets with sliced potato, onion, some butter, salt, pepper and garlic powder and roast on the grill. Set them over the hottest part until you smell onion then move them to the back. Put your steaks on and everything is done at the same time.[sm=chef.gif]

Grilled/roasted potatoes

I use one packet of of good seasons salad dressing mix and make it using half the oil and the vinegar(balsamic) and using no water.

Make the salad dressing directly in a gallon sized ziploc bags. Add the potatoes(sliced into wedges) and distibute marinate evenly. Let set until you have prepared the meat for grilling and but no longer.Transfer to pan with tongs. (do not pour out) I use a pan made specifically for the grill,( it has holes in the bottom)you could use foil, but they would not come out the same. Or I roast in the oven at 400 degrees for 45 min to one hour.

I like Jill Dupleix ~ her recipes are generally straightforward and relatively healthy (she doesn't do deep frying, but works out good alternatives for instance). I've got a couple of her books.

Brandy's right though, roasted garlic would be great with them!

Tried this Friday Night and it was wonderful, but needed a little longer cook time. Next time I will definitely cook them 15 minutes longer and then test. I'm betting they could go 30 minutes longer to suite my taste. [;)]

I make 'em all the time...with everything. Husband is a tater-freak.

Cut taters into whatever size wedges you like - I leave skins on.
Spray no-stick (Pam) on them.
Sprinkle garlic salt or another seasoning salt.

Bake at 400 for about 30 minutes.

I've also cut them slimmer (more like fries) and dipped them in egg whites to bake so they'd have a crunchy crust on them.
