Leftover coke chicken, broccoli and rice for me. Leftover steak, baked potato and eggplant zucchini Parmesan for hubby. Not sure if Joe has eaten yet, but he'll have a choice of either of those two dinners.

I so totally cheated tonight. I bought a broasted chicken already cooked and hot. Gravy in a bottle, instant potatoes and a can of corn and a can of baked beans. But my exchange student loved it. He keeps taking pictures of the food on the stove. His parents are going to get sick of looking at pots full of stuff they can't make out. LOL

We had tri-tip and red potatoes.

I used the rub / sauce from this recipe and liked it very much. Instead of grilling it I baked it for 50 minutes at 400*.

Sure!

In a skillet, pre-cook some chicken breasts, cut into chunks.

Sauce:
1/4 c. apple juice
1/3 c. brown sugar (I'm subbing honey)
2 tbsp. ketchup
1 tbsp. apple cider vinegar
1/2 c. water
1/3 c. soy sauce
dash of garlic
dash of ginger
dash of red pepper
