I have the same problem!

Could you cook the way that you like on a Saturday and take the leftovers to some singles at your church? If you attend church during the week (a Wednesday?), you could do the same on Tuesday.

I wish I had the time to do this every week, but I spend all day Saturdays in the books. That would be cool if I could bring some of these things in on Sunday morning... we all love to eat. If I had a bigger place, I could do a Dinner 8 at my house and cook to my heart's desire.

What I'm thinking about doing is cooking a little each week and putting things in the freezer... by the time I'm ready to have everyone over, my freezer would be full.

Shema, have you ever cooked a big meal that took all day? And had everything made from scratch?

That's me! But my mom is much quicker than me... and still good at it.

You know what I miss? I was thinking about this last night... when I was growing up, my grandparents had a huge garden. We'd go over to their house and someone would hand us a couple of paper bags and we'd sit and shell peas, husk corn, peel potatoes, etc. Then papa would fry some chicken, make a big pot of black eyed peas, corn bread, etc. and we'd enjoy a big dinner *sigh* These days, I live on McDonalds... I miss good food.

What a great memory! Maybe you can recreate it once you buy that house you posted the link for.

McDonald's? It's worth it to take the time to make something good and healthy so that you can heat up leftovers while you're studying. Sometimes I would do that, but too often I would instead order a pizza. Convenience and lack of planning on my part. You wouldn't believe how much money I've saved since finishing grad school simply by not ordering pizzas.

I was thinking the same thing about the house.

Oh, I can imagine how much you've saved... pizza and grad school go hand in hand.

Maybe I'll practice my cooking skills so I can save money on all the convenience food I've been buying (it was pizza for me this weekend, too), and buy that house with the money I save. Even a big sweet potato casserole has to be healthier than pizza. Ok, only if I control what goes in it (*she says as she remembers her Aunt's 12-egg casserole!!!*)

Yeah, but your mother's older than you and has had more practice! Stands to reason she'd be quicker. I suspect the problem that a lot of us have, that our mothers didn't is that we tend to rely far more on convenience foods than fresh ~ means we get less practice of preparing stuff so we're slower at it.

The other night, I took a loaf of garlic bread, chopped some fresh tomatoes and put on top, and covered with italian cheese blend, and cooked in oven at 425 for 10-15 minutes.

Instant bruschetta! Mmmm......

I buy frozen boneless skinless chicken breast in a bag. I'll take on out and put some salt, pepper, and italian seasoning on it. Make a like packet. Cook it for like 30-45 in the oven set on 400. I like mine crispy so then I brown it in a fry pan a bit. It turns out really good. I eat that on a salad or with veggies.

When I go out on a hunting trip, I take canned tomatoes, canned beans, onions, garlic, salt, pepper and a can of my favorite chili seasoning and make a pot of campfire chili with whatever I can take that's in season.

I set up the campfire with the dutch oven hanging from a tripod over the fire and brown the meat, (deer, elk, duck, goose, rabbit, whatever) with the onion and garlic, then add the tomatoes, beans, salt and seasonings. Let that stew for a while and hope the bears don't get it before you do.

I like hobo dinners too! You put some browned ground beef, veggies, tater tots and whatever seasoning you like into a tin foil pack and cook it. At camp we cooked it on the fire. You can use the oven too though.

Ok, I have a question... are you talking about a hunting trip where it's just you and your horse, or with a vehicle? Because I'm wondering how you'd get all that deer or elk meat back home.

Have you guys ever seen this recipe. I tried it last night and it turned out really good. If I had used cream instead of skim milk, I 'm sure it would have turned out better. The only draw back is now you can have chocolate cake in just five minutes, which is sort of not a good thing, lol. I also tried it with French Vanilla ice cream.............so so good!

5 MINUTE CHOCOLATE MUG CAKE

4 tablespoons flour

4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
1 large coffee mug

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour
in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.
EAT! (This can serve 2 if you want to feel slightly more virtuous). And why is the most dangerous cake recipe in the world?
Because now we are all only 5 minutes away from chocolate cake at any time of
the day or night!

Just don't use non fattening stuff like sweeteners, skim milk, egg substitute, or those chocolate chips made of cardboard materials or something, lol. Use the real stuff. It makes it tase so much better. Yeah, I'll do it again today.

I"ll bet you could mix up a few batches and put them in ziploc bags for an even faster cake. Just don't buy those little tubs of frosting to go with them, especially if you've ever eaten it by the spoonful like ice cream. It won't last until you make the cake. Don't ask me how I know this.

If I go on horseback, I have two or three horses with me. I own two myself. If it's deer or elk season I'll borrow a horse from a buddy of mine and take two horses as pack animals as well as my riding horse. I can normally get a deer back on one pack horse, but I don't like to overload an animal so if it's elk I distribute the load between the two. Elk can get pretty big.

I'm going to a hydroponic farm sometime in the next couple of weeks and will have to restrain myself from getting too much fresh produce. They don't have anything I can can (except for strawberries) so I have to limit myself to what will not go bad. One thing I'm looking forward to getting is Sugar Snap Peas! I love 'em and will try steaming. But I have a question: Does steaming kill the enzymes? I can't remember if that raises the temperature high enough or not.

Also, I just have to say that I started a mini container-garden and my romaine lettuce is looking great, as are my peppers and herbs. I can't wait to start harvesting.

Oh, and does anyone have a Champion juicer? I have a question.

Grace ~ what's the question about the juicer? If it's not specific to the Champion brand, someone else may be able to answer it.

I'm not sure if steaming kills the enzymes or not. I've always heard that it's healthier to steam than boil veg because the goodness isn't leaching into the water as it does with boiling. You can use the water from the steamer in stocks and gravy and stuff too, so don't throw it out.
